On Wednesday night I had the enormous pleasure of attending a wine dinner at Burnt Enz in Hackney. The occasion was the recent launch of Tutto Wines, a company dedicated to discovering, promoting and distributing small Italian wine producers. London-based founders Alex Whyte and Damiano Fiamma travel regularly to Italy where they seek out terrior-driven wines like those of Ar.Pe.Pe, Cantina Giardino, Cantina Guttarolo, and Barraco. Most (if not all) of the wines they sell are the product of organic or biodynamic grape cultivation.

Alex and Damiano paired their wines with the stellar edible offerings of chef Dave Pynt, whose Burnt Enz grill and BBQ-oriented restaurant is set up in the Climpson’s Roastery near London Fields this summer. Highlights included oysters with lime; grilled brown crabs; steelhead trout with fennel, caperberries and clams; onglet with bone marrow and pickled walnuts; and stunning dessert with berries, cream and cacao.
