About the organizers
Pam Yung is an acclaimed baker and chef. She most recently was the co-owner and baker/pastry chef of 1-Michelin-starred Semilla, a modern vegetable-forward restaurant in Brooklyn, NY. She has worked at El Celler de Can Roca, In de Wulf, La Chassagnette, Roberta’s, and Isa, to name a few, and is a rare talent whose bread and pizza skills are the renowned the world over.
Razza means ‘heirloom’ or ‘breed’ in Italian and this artisanal pizzeria, established by Dan Richer and his team in 2012, celebrates the uniqueness, purity and individuality of local ingredients. Each pie is crafted by hand with care and every ingredient is sourced with straightforward honesty.
Katie Parla is a Rome-based food and beverage expert and journalist. Her latest cookbook Food of the Italian South was published in March 2019.
